This is a very simple, easy, vegan, creamy pumpkin pasta. Kind of like a pumpkin mac and cheese. You can make this more mac and cheese like simply by changing up the noodles. Adding some daiya cheese couldn't hurt either. Some sage would be great in this dish too.
Recipe-
-1 box of pasta
-1 can of pumpkin
-1/2 container of silken tofu
-1/2 cup of raw cashews
-1/2 cup nutritional yeast
-1 cup of unsweetened unflavored non-dairy milk
-1 & 1/2 tbsp of cinnamon
-1/4 tsp of all spice
-1/4 tsp of nutmeg
-salt & pepper to taste
-1 bundle of black/lacinato kale
-1 onion
-3 cloves of garlic

Optional
-Pumpkin seeds
-sriracha or hot sauce
-vegan parm

*alternatives
*you can use the whole block of tofu instead of using cashews
*you can use 1 cup of raw cashews instead of using the tofu
*you can swap the kale for any other veggie or you can use no veggies.
*you can add some fresh or dried sage to give it a more savory flavor.
*you can add a little more liquid, put pasta in a casserole dish and bake at 375 degrees for about 10-15 minutes for a different texture.
*if you want to bake it, you can add some daiya cheese and/or breadcrumbs.

*you can play around with it anyway you want.
P.S. You can add pumpkin to almost any dish and it will be awesome! You think I'm kidding? Give it a try..
