LUMBERJACK MACARONI (pg 283, .76 cents per serving)
Hot boiled macaroni (8oz uncooked)
1/2lb grated cheddar cheese
3 to 5Tbsp Worcestershire sauce
1/4c chili sauce
salt and pepper to taste
3/4c hot melted butter

Spread macaroni out on a hot large platter. Sprinkle with cheese, Worcestershire sauce, chili sauce, salt and pepper. Pour hot melted butter over all. Mix with 2 forks until sauce is creamy. Serve at once on hot plates. Makes 6 servings.

FIESTA TAMALE PIE (pg 277, $1.94 OR $1.46 per serving)
1 small onion, minced
1 clove garlic, minced
1Tbsp fat (if needed, I just used the fat from the meat)
1lb ground beef
1/4lb ground pork sausage
1 - 1lb can of tomatoes
1 - 1lb. can whole kernel corn, drained
1 1/2tsp salt
1 1/2tsp chili powder
18 pitted ripe olives
1c corn meal
1c milk
2 eggs, well beaten
1c grated Cheddar cheese

Heat oven to 350. Sauté onion and garlic in hot fat. Add meat and brown. Pour off excess fat. Add vegetables and seasonings, bring to a boil. Pour mixture into square baking dish, 9" x 9". Press olives into mixture. Combine corn meal, milk, and eggs. Spoon over filling. Sprinkle with cheese. Bake for 1 hour. Makes 6 to 8 servings.


EASY DENVER SANDWICH (pg 292, .70 cents per serving)
1/4c minced onion
1/4c minced green pepper
1Tbsp butter
4 eggs
1/4c milk
1/2c minced cooked ham
salt and pepper

Sauté onion and green pepper slowly in hot butter in an 8" or 9" skillet. Beat eggs slightly with milk, stir in ham, salt and pepper. Pour into skillet; scramble gently witho nion and pepper mixture over low heat until just set. Spoon into hot toasted buns or serve between sliced of bread or toast. Makes 4 sandwiches.
