On request from some of our viewers, we are uploading a detailed unedited version of Making of McDonalds McArabia from scratch.  The McArabia is a pita bread sandwich available at all McDonald's outlets in Arab countries and Pakistan. It is known as the Grilled Chicken foldover in Singapore, Malaysia and South Africa, as McOriental in Spain, France and Holland, the McTurco in Turkey, Greek Mac in Greece and Cyprus, and as the McKebab in Israel. The sandwich was originally made to meet West Asian local taste.
A compact and edited version has already been uploaded.  We hope that this detailed version will give complete insight to all steps related to making at home McDonalds favorite McArabia with ease.

Homemade Chicken McArabia Recipe
Ingredients
McArabia Bread dough
3 cups all purpose flour (maida)
¼ tsp salt
1 tbsp sugar
1 tbsp instant yeast
3 tbsp powdered milk
½ tbsp fennel seeds (kalwanji)
2 tbsp cooking oil
1 ½ cups warm water
Using a sieve, sift the flour in a kneading pan and add salt, sugar, instant yeast, powdered milk, fennel seeds and cooking oil.  Mix all together.  Now progressively add warm water to the mixture and knead the dough well.  Grease a bowl, place the prepared dough mix in the bowl, cover with a kitchen towel and let it rise at a warm place for couple of hours.
Chicken Patties
500 grams Minced chicken
1 small sized onion, finely chopped
3 tbsp breadcrumbs
1 tsp garlic powder
1 tsp salt
¼ tsp paprika powder
¼ tsp garam masala (optional)
½ tsp black pepper powder
1 tbsp lemon juice
Mix all above ingredients in a bowl well so that a uniform mixture is made.  Cover and place in refrigerator for one hour.
Tahini
1 cup Sesame seeds
½ cup olive oil
Dry roast sesame seeds in a pan on low flame.  Roast till the aroma starts to rise from these seeds.   Ensure that the color does not change.  Pour in grinder and grind to fine powder.  Progressively add olive oil to make a paste. Store in a jar.  This we will use for making Tahini sauce (McArabia sauce).
Tahini Sauce
½ cup fresh yogurt
1/3 cup garlic powder
¼ tsp salt
½ tsp lemon juice
1 tbsp Tahini sauce
Mix all ingredients in a suitable bowl so that a consistent tahini sauce is made.
Cooking
Take out chicken patties mix from the refrigerator.  Heat 2 to 3 table spoon oil in a frying pan on medium heat.  Make medium sized patties from the chicken mix and fry these for about 3 minutes on each side.  These will be properly cooked and their color would slightly change to golden brown as shown the tutorial.  Cook all patties in the similar way and place in paper towel to absorb excess oil.  This mixture will be sufficient to make approximately 12 patties depending upon the size.
McArabia Bread
Take out the risen dough from the bowl and knead it again.  Divide the dough in 8 equal portions.  Take each portion and form a ball shape.  The roll it in the form of a thin flatbread.  Heat skillet on medium heat and cook each flatbread till these are well cooked from both sides.
Assembling McArabia
3 large sized tomatoes (cut in thin slices)
2 large sized onions (cut in rings)
Salad leaves or Iceberg lettuce As required
Coat about 2 tbsp tahini or McArabia sauce on half portion of flatbread. Place 3 tomato slices, 3 onion rings, 2 patties followed by slad leaves or iceberg lettuce.  Fold the other half and serve.

A very yummy and close to perfect McDonalds style Chicken McArabia is ready to be served.
