Sweet and crunchy Bifentang Garlic Shrimp! Chef at Ping Hao restaurant reveals his signature menu!

《Ingredients》

10 Shrimps
Minced garlic, bread crumbs, vietnamese chilli, potato starch, cooking oil
Salt, sugar, chicken stock, chives, butter, black bean sauce

《Recipe》

1. Remove legs and intestines from shrimps.
2. Wash minced garlic on running water and remove all moisture.
3. Deep fry minced garlic and bread crumbs in cooking oil at 180 degrees celcius.
4. Spread deep fried garlic and bread crumbs on kitchen towel and filter oil used.
5. Put a bit of potato starch on back of shrimps and sprinkle little more on top.  
6. Mince chives.
7. Remove all moisture from shrimps and deep fry them at the temperature of 190 degrees.
8. Spread butter on heated pan with 10 vietnamese chilli and black bean sauce.
9. Put fried shrimps on the pan with 1 pinch on chicken stock, 2 pinches of salt, 2 pinches of sugar. Mix well.
10. Pour deep fried garlic and bread crumbs on top.
