Mushroom Pilau Rice (British Indian Restaurant / BIR Style)

Made using pre-cooked basmati rice
Made using pre-cooked basmati rice this mushroom pilau is the perfect accompaniment to any dish. Perfectly flavoured with spices and garlic you can even eat this dish on its own.

Ingredients
2 cups of precooked pilau rice (see my video at Perfect Basmati Pilau Rice from scrat...)
3 tablespoons of oil
1/2 a medium sliced onion
1 grated clove of garlic
1/2 a teaspoon of salt
1 teaspoon of fenugreek leaves
6 finely sliced mushrooms
1 teaspoon of mix powder or curry powder
Method
1.In a non-stick high sided pan heat the oil and add the finely sliced onions
2.Fry for a couple of minutes until they just start to brown
3. Add the salt and dried methi, stir through and cook for 30 seconds
4. add the garlic, stir through and cook for a further 30 seconds
5. add the mushrooms and cook for a couple of minutes stirring gently to ensure they are all coated in the spice mix and get an even cook
6. add the mix powder, stir through, then add the rice
7. Cook stirring for 2-3 minutes to ensure the rice is piping hot before serving
8. serve topped with sliced green chillies if you want to ramp up the heat
