Cold Pig Ears with Chilli 涼拌豬耳

A very traditional Sichuan appetizer. The texture of is this dish is crispy as well as chewy.  You could never resist the temptation of this fascinating dish.

INGREDIENTS
Sichuan Pepper, Ginger, Green Onion, Rice Wine(Beer), Water, Pig Ears, Soy Sauce, Sesame Oil, Chili-pepper Oil, Vinegar, White Pepper, Salt, Sugar, Chicken Powder, Mashed Garlic

INSTRUCTIONS
1. Add Sichuan pepper, ginger, green onion, rice wine and water
2. Boil to welldone and turn to medium heat for 30 minutes until soften
3. Cut pork ears into slices
4. Cut scallion into small sections, green onion into paste
5. Add soy sauce, sesame oil, chili-pepper oil and vinegar together, then add white pepper, salt, sugar, chicken powder, mashed garlic, green onion and water in
6. Then add the ears in and mix them together
7. Add cooked peanuts and mix them together
