This Matcha Ice Cream is a true delight, embodying a perfectly balanced recipe in both flavour and mouthfeel akin to the ice cream creations I take pride in delivering. It captures the exquisite essence of a finely brewed cup of Matcha tea in the form of heavenly ice cream.

While simple to prepare, it is a flawless creation. The Matcha flavour is subtly pronounced, and the ice cream's texture is impeccable thanks to the xanthan gum, all without the need for egg yolks. Oh, the mouthfeel is divine. I won't say more; you simply must try it for yourself. Share it with your loved ones to experience the joy of Matcha together. Equipment used in the recipe:
✓ ice cream maker

Ingredients:
⚖ batch for 1.5-litre to 2-litre ice cream maker

• 600 g whole milk, fridge-cold (21.2 oz, 600 ml)
   -  250 g (8.8 g) to be added on [00:26]
   -  350 g (12.3 oz) to be added on [00:34]
• 200 g regular sugar (7.1 oz; 1 cup*) [00:35]
• ½ teaspoon xanthan gum (1.5 g) [01:23]
• 1 tablespoon Matcha green tea powder (7 g) [01:23] - this is a delicately flavoured Matcha ice cream; if you want a stronger Matcha flavour you can add up to 2 teaspoons more [01:27]
• 410 g heavy cream 35-36% fat, fridge-cold (14.5 oz, 410 ml) [01:40]

* 1 cup = 237 ml

The most important things in the recipe:
✅ do not play around with the ingredients and quantities; everything is there for a reason. Using less of this or replacing this with that, may result in too icy or too melty ice cream.
✅ the ice cream mixture must be fridge-cold when you churn it. So make sure you chill it as described in step 2 until it feels fridge-cold. When in doubt, prefer to use the ice cubes in excess or put it in the fridge overnight.
