Kentucky Derby Pie Recipe

1/2 (14.1 Oz) Package Refrigerated Pie Crust
1/2 Cup Chopped Pecans
1 Cup (6 Oz) Chocolate Chip (Semi Sweet)
1 Cup Dark Corn Syrup
1/2 Cup Sugar
1/2 Cup Light Brown Sugar (packed)
1/4 Cup Kentucky Bourbon (or water mix)
4 Large eggs
1/4 Cup butter - melted
2 Teaspoon plain or yellow cornmeal
2 Teaspoon Vanilla
1/2 Teaspoon of Salt

Bake 55-65 Minutes @ 325 Fahrenheit

Fit pie crust into 9" deep dish stoneware pie plate

Sprinkle Pecans & Chips evenly on crust.

Stir corn syrup + next three ingredients into a large saucepan & bring to a boil over medium heat.  Cook & stir constantly for 3 minutes.  Remove from heat.  Whisk eggs & next 4 ingredients.  Whisk gradually into hot corn syrup mixture - pour into pie crust.
