Mango season can not end without having Mango Chutney.. or you can call it Aam ki Sabji too. Enjoy with Roti, Paratha or Bread.

Ingredients :
Oil
Raw Mangoes (cut in cubes)- Kacche Aam
Panch Phoran Masala -(Mixture of 5 Spices) - Or Alternatively use Cumin seeds and Black Mustard Seeds
asafoetida
Salt
Turmeric Powder
Jaggery - Quantity should be half of mango
Corriander powder
Chili powder

Method:
Take a pan
Add little oil
Add Panch Phoran Masala used in Bengali Food
These have Black Mustard, Nigella seedsi, Fennel Seeds,  
Golden Fenugreek & Cumin Seeds
If you don't want to use Panch Pharan
then use Mustard or/and Cumin Seeds
Wait till all Masala starts crackling
Add a pinch of Asafoetida
Now add Raw Mangoes
Mix it well
Add some salt
Some Turmeric powder
Mix it
Add 1/4th cup water
Cover the pan and let raw mango cook for 10 minutes
Add jaggery, should be half to the quantity of mango
Jaggery also leaves water
Cover the pan and let it cook for 2 minutes more
Now take the pan off the heat
Let it cool down just a little
Add some coriander powder
Add Chili powder
Mix it well
Mango Chutney is ready
Enjoy with Paratha or Roti or Bread Meghna's Food Magic -
