Mexican Meatballs in Guajillo Sauce is an old recipe using the mild guajillo chilies and tomatillos.  Serve this with rice, spaghetti or just with some beans on the side.
Ingredients:
Sauce:
4 Guajillo chilies
1 pound tomatillos
1/2 teaspoon coarse salt
2 small garlic cloves
1 Tablespoon lard or oil
1 and 1/2 cups chopped onion
1 cup chicken broth for later

Meatballs:
1 pound ground turkey or beef
3 Tablespoons of the cooked onions or raw onions
Black Pepper
3/4 teaspoon coarse salt
1 Tablespoon oregano
1/4 cup fresh cilantro
1/4 cup bread crumbs
1 egg

Remove seeds from chilies and remove husks from tomatillos.  Wash tomatillos.  Heat skillet and wake up the chilies.
Place chilies and tomatillos into a sauce pan with the garlic.
Cover with water and boil for 15 minutes.

Put your ingredients into a blender with 1/4 cup cooking liquid and blend until smooth.

Heat sauce pan and cook onions in the lard.
Remove 3 Tablespoons onions for the meatballs.
Add your blended sauce to the onions (strain if desired) and cook for 5 to 10 minutes while you make your meatballs.

Mix your ground beef with all the other ingredients and form into meatballs.

Add 1 cup or so of chicken broth to your simmered sauce.
Add your meatballs and cook for 35 to 40 minutes.
Serve over rice or noodles or just on the side with some refried beans.

This was my first time making with ground turkey.  I used the healthy turkey that only has 2% fat and it was not nearly as good as using ground beef.  Using the regular ground turkey does nothing to making it healthier because regular ground turkey has as much fat as regular ground beef.
I highly recommend using ground beef with 20% fat, so much better.
