From the garden we harvest green onions and a garlic plant for Chinese roast duck. This is a step by step guide to roasting duck.

There are two styles of Chinese roast duck-- Peking and Canton.
Both ducks come out of the roaster with crispy skin. However, after sitting, the crispiness disappears. Because of the small window for crispiness, many Peking duck restaurants require advanced notice of interest. They will then time the roasting for your arrival.
