Are Night Furies really extinct

We keep hearing over and over again that Toothless is the last Night Fury in How to Train Your Dragon - And that night furies are extinct. How do we KNOW they are. If they are deemed the MOST intelligent species of all the dragons in How to Train Your Dragon, then if someone was hunting them down to quote and quote Near Extinction, Wouldn't they be intelligent enough to stay hidden even the more?
