Ingredients:
150 g egg whites
300 g sugar
1/4 tsp vanilla
20 g starch
1/4 tsp citric acid
Preparation:
Preheat the oven to 90°C. Line a baking sheet with parchment paper.
Carefully separate the egg whites from the yolks.
In a bowl, combine the egg whites with sugar and vanilla.
Place the bowl over a double boiler and, stirring with a spatula, heat the mixture to 50-55°C.
Transfer the egg white mixture to a mixer bowl and beat at high speed until stiff peaks form.
Add the starch and citric acid, continuing to beat until smooth.
Using a piping bag, pipe the mixture onto the parchment paper, forming meringues of any shape.
Place the baking sheet with the meringues in the preheated oven and bake for about 1.5 hours. Then prop the oven door open with a "pencil" and continue baking for another 30 minutes.
After baking, leave the meringues in the oven to cool completely.
Top the cooled meringues with cottage cheese cream or whipped cream with powdered sugar and garnish with fresh fruits.
