Pickpocketing is a very easy
Pickpocketing is a very easy skill to level with many factors contributing to how much XP you will earn. The said factors are item weight, item value, and success percentage. You only really need to pay attention to value and success percentage though.
The best way to get XP is by looting expensive and valuable objects and by reverse looting them.
You're best off getting enough experience to put one point into pickpocket and one into sneak just to get hidden faster. Once you have a perk in each you can go to Windhelm and find the beggar that can train you in pickpocket. She's usually around one of the fires. Buy a level, quicksave, pick the gold of her, and repeat. Just stop once it costs more than 1,500 gold as you cannot pick more than that at the time. You should be around level 50 at this point. Sink the rest of your points into pickpocket skills the poisoner and key perk are not needed.
Head to a place where there are sleeping people but you're not trespassing such as Jorrvaskr or any guard barracks. I chose Solitude's Castle Dour. I first took all their items just for bonus experience and then chose my guard to pick and reverse pick. Put all but 1500 gold into a nearby storage container. Make a quick save, place the gold on him, quick save, and pick it back. This can be done as many times as you want without leaving his inventory but if you get caught you'll have to go back to before you were caught. As you get more perks you can place and pick more gold earning levels faster. In no time you will have 100 in pickpocket. I had mine just under an hour but it could probably be done faster.
I tried planting and picking a valuable potion (1,000,000 gold) and only got a tiny bit of XP instead of level 100, I believe these items don't work or maybe it was just too valuable for Todd Howard's liking
