PANCIT CABAGAN is a noodle dish named after the town where it originated CABAGAN, ISABELA. The fresh egg noodles is the key ingredient making it different from other noodles dish. Pancit Cabagan is served swimming into the noodle sauce as the dried noodles are thirsty for water and easily absorb the sauce. Another secret is the dark soy sauce that they used which they call Malabon Toyo, small amount can make the whole broth to darken easily. The soy sauce is not too salty despite the color.
