Here's an easy rendition of street corn that is sure to please.

Making corn in the husk on the Blackstone griddle is a fantastic way to enjoy flavorful and juicy corn. Here's a step-by-step guide to help you:

Preheat the griddle: Start by preheating your Blackstone griddle. Set the heat to medium-high or around 375-400°F (190-204°C) and allow it to heat up for a few minutes.

Prepare the corn: While the griddle is preheating, prepare the corn by removing any loose or damaged outer husks. Peel back all of the layers of the corn husk and liberally butter the entire cob of corn.   This is a great time to add any seasonings you'd like.  Tequila Lime, Parmesan Ranch, or a simple Garlic Salt are a few of our favorites.

Soak the corn (optional): Soak the corn in cold water for about 10 minutes. This helps to prevent the husks from burning and keeps the corn moist while grilling.  Drain and place on the griddle: Remove the corn from the water and shake off any excess moisture. Place the corn directly on the preheated griddle, still in the husks. Arrange them in a single layer, leaving some space between each corn to allow for even cooking.

Cook and rotate: Cook the corn on the griddle for about 15-20 minutes, turning the corn occasionally to ensure even cooking. The husks will char and blacken, and the corn kernels will become tender and flavorful.

Check for doneness: After 15-20 minutes, carefully peel back the husks of one corn to check for doneness. The corn should be cooked through, and the kernels should be tender. If needed, cook for a few more minutes until the desired doneness is achieved.

Remove from the griddle and cool: Once the corn is cooked, remove it from the griddle using tongs or a spatula. Place the cooked corn on a platter or cutting board to cool slightly before serving. Be cautious as the corn will be hot.

Serve and season: Peel back the husks and remove the silk from the cooked corn. You can serve the corn as is or brush it with melted butter and season with salt, pepper, or other desired seasonings. This allows the flavors to penetrate the corn and enhance its taste.

Enjoy: Serve the corn on a platter or individual plates, and enjoy the delicious flavors of the grilled corn.

Grilling corn in the husk on the Blackstone griddle adds a wonderful smoky flavor and keeps the corn moist and tender. It's a perfect side dish for barbecues or outdoor gatherings.
