This easy baked chili relleno recipe will get you telling everyone you know about good and easy this recipe is. So flavorful and not such a time consuming task at all. The best part is: it is not eggy or greasy.
Oven baked with no mess, filled with delicious ground beef, potatoes and cheese with a wonderful tomato sauce on top.

Ingredients:
Use 4 poblano peppers
-1 lb. ground chuck
-1/2 of a white onion, chopped 1/2 used for filling and 1/2 for tomato sauce
-2 to 6 cloves of garlic, minced 1/2 used for filling and 1/2 for tomato sauce
-1 large Russet potato chopped small
-1 Anaheim pepper, chopped 1/2 used for filling and 1/2 for tomato sauce
-1 Roma tomato chopped (for filling)
-4 to 5 Roma tomatoes chopped for sauce
-2 beef bullion cubes 1 for filling and 1 for sauce
-1/2 cup water for filling
-1 cup water for sauce
-2 tbsp. of tomato sauce
-1 tsp. Mexican oregano for filling and additional 1/4 tsp. for sauce
-1 tsp. ground cumin for filling
-1/2 tsp. cumin for sauce
-1/4 cup chopped cilantro
-salt and pepper to taste
-1 tbsp. of olive oil
-Mexican cheese blend shredded cheese
