To prepare an oriental sweet
To prepare an oriental sweet called Gata (kyata) you will need:
Dough:
• Flour – 350-450 g
• Sour cream – 250 gr
• Butter – 125 g
• Egg – 1.5-2 pcs.
• Soda – 0.5 tsp.
• Salt – a pinch
Filling (horiz):
• Flour – 300-400 g
• Sugar – 100-300 g
• Butter – 100 g
• Nuts (optional) – 100-120 g
• Vanilla sugar – 10 g
• Lemon zest – 1 pc.
Stages of preparing gata (kyat):
1. Knead the dough:
• mix flour and salt
• add chilled butter – grind into fatty crumbs
• lightly mix the eggs in a separate container and divide into ¾ and ¼ parts
• add sour cream, ¾ of the egg mass and soda to the fatty crumbs
• knead the dough softly and not sticky to your hands
2. Wrap the dough in film and set aside for 15-20 minutes
3. Prepare the filling (horiz):
• mix sugar, vanilla sugar and lemon zest
• add softened butter – grind with sugar
• add flour in small portions, at the same time grinding the flour with the butter-sugar mass (crumbs) - you should get a filling in the form of crumbly crumbs
• grind the nuts into fine crumbs
• mix nut crumbs with filling
4. Flour your work surface
5. Divide the dough into two parts - do not touch one part yet, and transfer the second to the work surface
6. Form gata (kyat) blanks:
• roll out the dough into a rectangular layer, 2-3 mm thick
• place half of the filling on the dough – spread in an even layer over the entire surface
• roll the dough into a roll with the filling inside, starting from the longer side
• roll the roll once or twice with a rolling pin (compacting it
• cut the roll into pieces 2-3 centimeters wide
7. Place the roll pieces on a baking sheet lined with parchment paper
8. Bake the gata for 20-30 minutes (or until golden brown) in an oven preheated to 180-200 degrees (Celsius).
9. Leave the finished gata on the table until it cools completely
