Braised Pork Spareribs With Shiitake Mushrooms


Ingredients:
1.5 cup dried shiitake mushrooms
2 lbs pork spareribs
1 scallion
1 small onion
6-8 slices of ginger
1/2 tsp salt
1/2 tsp sugar
2 tbsp soy sauce
1 tsp dark soy sauce
1 tsp oyster sauce
1 tbsp Shaoxing wine

Marinate mushrooms:
1/4 tsp sugar + little bit of oil (about 1/2 tsp)

To blanch the spareribs, we need:
2 slices of ginger
1 tbsp Shaoxing wine
A pot of water enough to cover the ribs

1.5 杯乾冬菇
2磅排骨
1棵蔥
1小個洋蔥
6-8片薑
1/2茶匙鹽
1/2茶匙糖
2湯匙生抽
1茶匙老抽
1茶匙蠔油
1湯匙紹興酒

醃冬菇:
1/4茶匙糖 + 少許油 (大概1/2茶匙)

排骨汆水需要:
2片薑
1湯匙紹興酒
1煲水足夠蓋過排骨
