Brenda makes the family's favorite Egg Casserole with fresh spinach from the garden and farm-fresh eggs.

Recipe - Eggs Florentine

6 large eggs
1 16 oz. carton cottage cheese
8 oz. swiss or mozzerella cheese
1/2 lb. feta cheese
1/2 cup melted butter
1 10-oz package frozen chopped spinach (or fresh if you have it)
1/2 pound bacon (optional)
Ground nutmeg
Hot pepper sauce (or hot chili powder)

In large bowl beat the eggs. Add the cheese and butter and milx well. In a saucepan cook the spinach. Drain well, squeezing the excess moisture out in a towell. Add the spinach to the egg-cheese mixture. Add bacon if desired. Add the nutmeg and a few dashes of hot pepper sauce. (I use ground chipotle chili pepper) Pour into a 9x13 baking dish. Bake at 350 degrees for 1 hour. Cut into squares and serve. May be prepared the night before and kept in refrigerator overnight and baked the next day. I bake mine and then cut into squares. I freeze the squares individually and store in freezer bags. To prepare, microwave until hot and ENJOY!
