We normally cook this lovely curry to go with our nasi dagang.

For us, we like our dish with more gravy so that it is not too dry. Here, we are using a 'taller' pot instead of a wok, thus it may look "watery". However, after cooking, it is not as diluted as what you see here but there will be more gravy to be added on as our friends tend to like more gravy on their rice. Water can be reduced if required, but based on experience, it tends to be extremely dry after finishing up half pot.

Note : prior to cooking, we 'soaked' the fish in the tamarind water overnight in the fridge. We also boil our vegetables in tamarind water a few hours prior cooking.
