For today’s easy cookies recipe we are making my favourite coconut sandwich cookies filled with an easy and delicious vanilla cream cheese filling! These chewy coconut cookies have an irresistible texture and a rich coconut flavour that balances perfectly with the creamy vanilla cream cheese filling. Chewy Coconut Cookie Recipe:

Ingredients:
1/2 cup salted butter (softened) 113g
1/2 cup white granulated sugar 100g
1/3 cup packed brown sugar 60g
1/2 teaspoon coconut extract 2g
1 large egg 50-60g
1/4 teaspoon sea salt 1.5g
3/4 teaspoon baking soda 3g
1 + 1/4 cup all purpose flour 160g
1 + 1/4 cup sweetened shredded coconut* 112g
* for a less sweet cookie use unsweetened coconut

Directions:
Preheat your oven to 350F/175C. Line cookie sheets with parchment paper. In a medium bowl combine flour, salt and baking powder. Whisk until combined. In a large bowl using a hand mixer cream (or in the bowl of a stand mixer fitted with the paddle attachment) combine room temperature butter and both brown and white sugar and mix on medium low until well incorporated, around 2 minutes. Add the egg and coconut extract and continue mixing on medium low until the mixture is light in texture and pale in colour. Add in the dry mixture, mixing until just combined. Lastly add the shredded coconut and mix until evenly distributed. Using a 3/4 Tbs cookie scoop or a rounded heaping half tablespoon drop the cookies onto the parchment lined sheets. Allow a good amount of room for spreading! Bake for 6-8 minutes, removing as soon as the bottoms and edges are a light golden brown. For a larger cookie use 1.5 Tbs cookie scoop and bake for 7-9 minutes. Don't overcrowd your pan! Remove them as soon as the edges are a light golden brown. Allow the cookies to cool on the pan for a couple minutes and then move to a wire rack to finish cooling completely!

Vanilla cream cheese filling recipe:

Ingredients:
4 Tablespoons salted butter (softened)
4 Tablespoons cream cheese (softened)
1 Cup powdered sugar
1/2 Teaspoon vanilla extract*
*for more coconut flavour substitute coconut extract

Directions:
In a medium bowl using a hand mixer cream butter and cream cheese on medium low until well combined and smooth. Add in powdered sugar and mix on low for 1-2 minutes until well incorporated. Scrape down the sides of the bowl. Add in the vanilla (or coconut) extract and mix until combined. Transfer to a piping bag fitted with a medium round tip (or if you would prefer, skip this step and just spread the filling instead). Pipe a spiral of filling on the underside of one coconut cookie and then place a second cookie of equal size and shape on top. Press together gently until the filling reaches the outer edge of your sandwich cookie!
