Fish can be cooked in many different ways, and blackening is one of the fantastic easy to do so! This method creates some smoke while cooking, so best to cook it outdoors if possible and either way, the results are amazing - even those who do not like fish, actually like fish when cooked this way :) Enjoy
Blackening Fish
Ingredients
• Fish Fillets or fish steaks
• Salted Butter (enough to coat all the fish)
• Blackening seasoning (alternate paprika)
• Lemon wedges (optional)
Needed:
• Cast iron frying pan
• Optional – BBQ Side Burner
Process
• With your burner on high, place dry cast iron pan on your burner and leave it on high for 20 – 30 minutes (you want the cast iron pan to be extremely hot)
• Dip your fish fillets into the melted butter (or bast them with the butter – it’s important that the fish fillets are completely coated with the butter.)
• Season both sides of the fish fillets with your blackening spice
• Place fish fillets onto the dry, hot, cast-iron pan
• Cook for approximately 2 mins, or longer depending on thickness (you will see an opaque color forming on the side of the fillets) Flip the fish and cook the other side for another 2 minutes, or until cooked.
• Remove from the pan, and serve hot. Optional: squeeze some lemon juice on the fish, and enjoy 😊
