It's rare for most countries to have a single location be so influential to their entire cuisine. But in the case of Japan, one city has defined the basic modern flavor of Japanese food: Osaka. Today, I traveled to Osaka and around the Kansai Region, and figure out why so many Japanese dishes are from here.
