Hi everyone, today I offer you my version of strawberry tiramisu, a delicious alternative to the traditional version.

Ingredients:

300 g of fresh strawberries
80 g of icing sugar
juice of 1 lemon
100 g of sponge cake cut into cubes or ladyfingers

strawberry syrup (optional)

Tiramisu cream
5 yolks
140 g of sugar
50ml of water
250 g of mascarpone
1 cup (240 ml) fresh cream
2 tbsp powdered sugar

Method of preparation:

Start by preparing the strawberry syrup. Cut the strawberries into cubes, put them in a pan, add the sugar and the juice of 1 lemon. Bring to a boil and cook for about 5 minutes then set aside and leave to cool.

Separate the egg whites from the yolks and beat the latter with an electric or planetary mixer. Put 140 g of sugar and 50 ml of water in a saucepan, heat until it reaches a temperature of 121°C. Slowly incorporate the sugar syrup into the yolks, stirring constantly until the mixture has completely cooled.

At this point you can add the mascarpone, incorporating it delicately.

Now put the whipping cream in a bowl (you can put the bowl in the fridge for a few minutes beforehand to help keep the cream cold).
Using an electric mixer, begin whipping the cream on medium-high speed until it begins to thicken.
Add the icing sugar and continue beating on medium-high speed until the cream reaches the desired point.
Gently mix the mascarpone cream with the whipped cream until well incorporated.

Now all that remains is to put layers of cream, cooked strawberries, sponge cake cubes (or ladyfingers) and a little strawberry syrup in single-serving glasses.
Repeat the layers until you have the desired amount of dessert in the glass.

Keep the glasses thus composed in the refrigerator for at least 5 hours or even better overnight.
Serve cold and enjoy your meal!
