This recipe is our vegan take on a Cajun seafood boil from a delicious seafood restaurant in LA - RECIPE BELOW!

RECIPE:
Ingredients:

2 packs vegan sausage (we used spicy Beyond)
2 packs vegan shrimp (we used BeLeaf)
2 cups organic rice (we used white basmati)
2 Bell peppers (your color of choice), small chopped
5 ears of corn, halved
24 oz fingerling or creamer potatoes
1 large sweet onion, small chopped
1 head of garlic, minced

Directions:
** Preheat oven to 350°

Corn & Potatoes
1 - Fill a large pot with water and potatoes
2 - Season water with 2 TBS each vegan butter, garlic powder, onion powder, paprika, Cajun seasoning, 1 TBS fresh garlic, and 2 tsp each salt and pepper
3 - Bring to a boil, add 1/4 cup each onions & peppers
4 - Cook til soft about 20-25 mins
5 - Shuck corn and break ears in half. Add to pot, cover & turn off heat.

Rice
1 - Cook rice according to package in seasoned water with 1 tsp each of garlic powder, onion powder, paprika, Cajun seasoning and 1 TBS fresh garlic, 2 TBS each chopped onions, chopped peppers and vegan butter

Sausages
1 - Put sausages on oil sprayed parchment paper covered cookie sheet and bake for 20 mins
2 - cut into 1/4” pieces

Vegan Shrimp/Peppers/Onions/Garlic
1 - Chop peppers & onions
2 - mince garlic
3 - in a large sauté pan, heat 2 TBS vegan butter & add 1/2 to 1 cup of onions. Sauté until soft 3-5 mins
4 - Season onions with 1 tsp each garlic powder, onion powder, pink Himalayan salt, paprika & 2 tsp Cajun seasoning
5 - Add another 2 TBS vegan butter
6 - Add 1/2 to 1 cup of peppers & cook til soft 3-5 mins
7 - Add vegan shrimp, season again like #4 except no salt. Brown shrimp
8 - Add 1 TBS vegan butter, 1-2 TBS fresh garlic, sauté for another 3 mins

Garnish: fresh chopped basil and/or parsley, ladle broth from potatoes & corn over entire dish
