Chocolate Mousse Domes with Orange Insert and Chocolate Mirror Glaze | Chocolate and Orange Dessert
This individual entremet dessert does not only look fancy and pretty, but it also tastes very delicious and luxurious. The combination of orange and dark chocolate is classic. Zest of 1 Orange
130g Orange juice | 1/2 cup
40g Sugar | 1/4 cup
7g Corn starch | 1 tbsp
42g Butter | 3tbsp
Chocolate Mousse:
2,5 g Gelatine sheets or gelatine powder | apz. 2 sheets depending on your brand
145g Dark chocolate | 1 cup grated
106g Milk | 2/3 cup + 1tbsp
206ml Heavy Cream | 1 cup + 1 tbsp
Choocolate Pate sablee (shortcrust)
90g Soft Butter | 6.5 tbsp
90g Sugar | 1/2 cup
1g Salt | 1/2 tsp
100g All purpose flour | 3/4 cup
2,5g Baking soda | 1/2 tsp
18g unsweetened cocoa powder | 2tbsp + 1 tsp
