Baked Parmesan Chicken with CookingAndCrafting

Another delicious, quick meal that mother and I loved!  

1/2 c. Parmesan cheese
2 eggs, well beaten
3/4 c. panko (Japanese bread crumbs) or cornflake crumbs
4 boneless skinless chicken breasts, flattened
1/2 c. vegetable oil
4 slices Monterey Jack or pepper jack cheese
1/2 lb. fresh mushrooms
1 Tbsp. butter or olive oil
1/2 to 3/4 c. cooking wine (I use chicken broth, whenever asked for wine)
Chopped parsley and lemon juice or wedges, for garnish

Preheat oven to 325 degrees. Place Parmesan cheese, eggs and panko in three separate bowls.

Dip chicken into Parmesan cheese first, then eggs, then panko. Heat oil in skillet. Brown chicken, the place in a baking dish. Piece should not overlap. Place a slice of cheese on each breast.

Saute mushrooms in butter or oil; add wine. (I just tossed it all in...was running behind time!)  Place mushrooms over chicken breasts and cover with liquid from pan. Bake 30 minutes (do not overcook or chicken will be dry). Garnish with chopped parsley and lemon juice or wedges.

We loved this dish.  The bottom is kept moist (not really super wet), the top that is not under the cheese stays a little crispy. Nice flavor. I felt the cheese gave it a little too much salt flavor, but mother said she didn't think so. I had another bite a few hours later and it was fine.  Very good and will be added to the meal rotation.
