Treat yourself to this sweet Daulat Ki Chaat with refreshing rich flavours from the streets of Delhi.

Daulat Ki Chaat
Serves- 2-4
Ingredients –
Full cream milk or Buffalo's milk – 1 ltr
Dairy cream (full fat)- 1 tbsp
Cream of tartar – 1 tsp
Silver leaf (chandi ka vark)– 3-4
Castor sugar – as per taste
Chopped pistachios (boiled & de skinned)– 1 cup
Saffron (Kesar)- 10-15 strands

Method –
Boil the full cream milk.
Once cool, add dairy cream and cream of tartar & refrigerate it overnight.
Next day, whisk it in a bowl and keep removing the froth in a plate
Drain the milk from the froth plate & refrigerate it till set.
Add saffron strands to the remaining chilled milk.
Whisk it & keep removing the saffron froth in another plate
Drain the milk from the saffron froth plate & refrigerate it till set.
In a mini chaat bowl put the plain froth first & then the saffron froth
Sprinkle some castor sugar and chopped pistachios on top
Garnish with silver leaf (chandi ka vark) on top & serve!
