Here we will show you how to make easy homemade noodles. Making Handmade Noodles can seem daunting, but fear not, it's easier then you might think. Homemade noodles are a great treat, and so satisfying to eat. So make you handmade noodles today :) Handmade Noodles are mostly water and flour, and the most important thing is to let the dough rest. You rest the dough to make the flour dehydrate better, and also to make the gluten in your flower to become more elastic. The more elastic it gets, the easier it is to knead the dough and to get at smooth and easy to work with noodle dough. Homemade noodles are so much tastier than the dried store-bought version then once you make this you will think twice before you ever buy dried ones again. These noodles can be cut into whatever shape and thickness you need, they work great as an udon style noodle and even as a ramen style. SODIUM CARBONATE In this recipe, we use a small amount of sodium carbonate or soda ash. The soda ash makes the noodles more elastic and gives it a more "slippery" feel. You can absolutely skip that ingredient, but if you want to use it it is very easy to make at home. Just bake baking soda at 120c for about 2 hours and you will have soda ash. Step by step instructions on How to make easy homemade noodles. Put 340 grams of all-purpose flour, 1/8 tsp salt, and 1/8 tsp sodium carbonate in a bowl. Stir while adding 150 grams of water. Mix until you cannot see any water. Rub the noodle dough between your hand until all the flour is absorbed. knead the mixture until a dough is formed. Cover and let rest for 20 minutes. This relaxes the gluten and makes the noodle dough more elastic. Knead it again for about 1 minute, cover and let rest for another 20 minutes. Repeat the kneading 1 more time, cover the dough, and let it rest for 1 hour. Dust a work surface with corn starch and start to flatten the dough out. Roll out the dough as flat as you want your noodles. Rotate the noodle sheet after each roll. Roll up the sheet on your rolling pin to make the sheet more even. Don't be afraid to use more corn starch if the dough gets sticky. Fold the noodle sheet over itself and cut it into 2 pieces. Cut the noodles to your desired width. Put the noodles into boiling water. Boil the noodles for about 2 minutes. Transfer the noodles to cold water for about 30 seconds then drain them well. Put the noodles in a bowl and coat them with oil. Now the noodles are ready for whatever you want to use them for. These noodles are great in a stir fry, but also good for a noodle soup.
