Kachori is an amazing snack of fried dough encasing a savoury filling. It's kind of like a Samosa, but super low maintenance and easy to make :D

I filled this one with a delicious spiced lentil mixture which is SO good. This is the perfect snack to serve guests before dinner with an ice cold drink :)

For the Dough

2 cups, All Purpose Flour
1/2 tsp, Salt
1/4 cup, Ghee
2/3 cup, Water

For the Filling

1/2 cup, dried Moong Daal
1/2 tbsp, Ghee
1 tsp, Coriander Powder
1 tsp, Cumin Powder
1 tsp, Amchur (Dried Mango) Powder
1 tsp, Fennel Powder
1/2 tsp, Cayenne Chilli Powder
1/2 tsp, Dry Ginger Powder
1/8 tsp, Asafoetida

Canola Oil for deep frying

METHOD

In a bowl, mix together Flour and Salt. Add Ghee, and mix until Flour becomes crumb like in texture. slowly add in water, and knead until a soft dough forms. Cover with a damp cloth and allow to rest for 45 mins.

Rinse Moong Daal several times under warm water. Cover with hot tap water and allow to soak for 30 minutes. Drain and set aside.

Place soaked Moong Daal in a food processor and pulse until coarsely ground.

Heat Ghee in a small frying pan on medium-low heat. Add all spices, and toasted for 10-15 seconds. Then add ground Moong Daal and cook until mixture becomes try and almost powdery in texture, 4-5 minutes. Remove from heat and allow to completely cool.

Divide rested dough into 12 balls. Stretch each ball so that it is 1.5 inches in diameter, and place a teaspoon of the Moong Daal mixture in the middle. Pinch the dough around the Moong Daal Mixture, sealing it. Repeat process for remaining dough.

Gently press on dough to form a 2.5 inch circle.

In a deep pot, add enough oil to deep fry and heat on medium. When oil is warm, slowly add the Kachoris and cook for 10-12 minutes, flipping them over from time to time until they are uniformly golden brown and crisp.

Drain on paper towel, and enjoy warm or at room temperature! :)
