This Crockpot Barbacoa recipe is juicy, full of flavor and super tender with an incredibly tasty sauce! Just slather a chuck roast with our incredible wet spice rub, then it's into the crockpot to slow cook for 8 hours - so easy! Crockpot barbacoa is perfect for making tacos, burritos or quesadillas, and it gets even better on day 2, making it a winner in our house... except we rarely have any leftovers 😉

Crockpot Barbacoa Ingredients
2.5 - 3 lb boneless beef chuck roast
salt & pepper
1/2 cup cilantro, thoroughly washed
2 tablespoons fresh lime juice
4 cloves garlic, minced
2 tablespoons diced chipotle peppers in adobo sauce for more spicy barbacoa, use more of this!!
1 tablespoon tomato paste
2 teaspoons chili powder
1 tablespoon cumin
2 teaspoons garlic salt
1 teaspoon ground oregano
6 oz Mexican beer
6 oz beef broth
1 tablespoon Better Than Bouillon Roasted Beef Base

Easy Crockpot Barbacoa Recipe Directions
Trim extra fat from the chuck roast.  Season all sides with salt and pepper.

We're going to make the wet rub using a Nutribullet to blend everything together, you can also use a food processor or blender, or cut everything finely and mix together.

Cut the stems from the cilantro and place the greens in the Nutribullet. Squeeze 2 limes and juice.  Pour 2 tablespoons of freshly squeezed lime juice into the container. Add 4 cloves of minced garlic. Add the dry spices and tomato paste.  Add the chipotles in adobo sauce. Place the lid on the container and blend.

Spread the wet rub over the top of the roast. Place in the crockpot, rub side down and spread the remaining rub on the top of the roast. Pour the beer and the beef broth into the slow cooker, along the side of the roast so the rub is not washed off the top of the beef. Note: if you prefer, you can make the barbacoa with consomme or beef broth instead of using the 6 oz of beer. Cover and cook on LOW for about 8 hours or until tender.

Remove the roast to a cutting board. Skim the fat from the juice if necessary. Shred the beef into pieces, removing and discarding any fat. To serve, add some of the delicious juice to the beef and serve the filling for barbacoa tacos, burritos, enchiladas, quesadillas, taco bowls, nachos - let your imagination run wild. My favorite way to serve our barbacoa recipe is in tacos, spooning the savory juice into my tacos with cilantro, chopped onions, avocado and a little tomatillo sauce - trust me, you will 😍 it!

Refrigerate any leftover meat with the cooking liquid. I like to reheat the barbacoa slowly with the juice in a cast iron skillet over medium heat.

Americanized Barbacoa Recipe
This is an Americanized version of traditional Mexican barbacoa recipe made in a crockpot or slow cooker. I'm using a beef chuck roast in place of the beef cheeks that are often used in a traditional barbacoa recipe. After searching in our market for beef cheeks, the butcher recommended a chuck roast as the best option, given that it's cooked in the slow cooker for 8 hours.
