Betty demonstrates how to make a Strawberry-Cream Cheese Frozen Dessert for Valentine's Day.  This dessert consists of a baked coconut crust, a layer of strawberry preserves, a layer of sweetened cream cheese with pecans, and a layer of sweetened whipped cream.  It is perfect for celebrating Valentine's Day!  

Strawberry-Cream Cheese Frozen Dessert

2 cups sweetened, flaked coconut
2 tablespoons sugar
1 tablespoon all-purpose flour
2 tablespoons melted butter
18-ounce jar of strawberry preserves
8-ounce package cream cheese, softened
½ cup confectioner's sugar (This is the same as powdered sugar or icing sugar.)
½ cup chopped pecans
1 tablespoon milk
1 teaspoon almond extract
1 cup whipping cream
¼ cup confectioner's sugar

In a medium-sized bowl, combine coconut, sugar, flour, and butter.  Mix well.  Press mixture firmly and evenly into bottom of an 8 ½-inch springform pan (or 8-inch square pan).  Bake at 350 degrees (F) for about 8 to 10 minutes, until golden brown.  Chill until cooled.  Spread half of the preserves over crust, reserving the other half for garnish.  In a large bowl, use a mixer on medium speed to beat cream cheese and ½ cup confectioner's sugar until light and fluffy.  Stir in pecans, milk, and almond extract, mixing well.  Spread cream cheese mixture over preserves.  In a medium-sized bowl beat whipping cream and ¼ cup confectioner's sugar until fluffly.  Spoon over cream cheese layer.  Freeze until firm.  Remove from springform pan and let sit at room temperature about 15 minutes before serving.  Garnish as desired with remaining preserves.  This is a beautiful dessert for Valentine's Day!  I hope you love it!  Love,  --Betty  ♥♥♥
