Piroŝki, (Piroshki) are somewhat like a croquette. Made several different ways all across Eastern Europe, the Piroshki I show you how to make are most common in Macedonia. I show you a classic filling, but feel free to experiment. The addition of potato to the dough makes the insides soft and fluffy, while the breadcrumb coating gives these a wonderful exterior crunch! Serve with lemon wedges and sour cream. Everyone will love these!

YOU NEED:
350 g flour (extra a little at a time if needed)
350 g potatoes, peeled, boiled and mashed
100 ml tepid milk (or a splash more later if needed)
1 sachet of yeast
scant pinch of sugar
2 eggs, separated
water (only if needed, and add little by little)
200 g Kashkaval cheese, finely cubed or shredded (you can use Mozzarella or Gouda as a substitute)
150 g smoked ham, finely diced or minced
salt to taste
salt and pepper to taste in egg whites
150 g breadcrumbs, lightly salted
vegetable oil for frying
