Borek's recipe for Red Cabbage Borek (Turkish recipe).
🛒 Ingredients (6-8 servings):

🔸 600 g red cabbage (21.4 oz) (1 small or ½ large)
🔹 2 carrots
🔸 1 onion
🔹 30 g raisins (¼ cup)
🔸 100 ml natural orange juice (⅓ cup + 1 tbsp)
🔹 11 sheets of phyllo dough (300 g / 10.7 oz) (36 x 32 cm / 14.1 x 12.6 in)
🔸 Salt
🔹 Ground pepper
🔸 A pinch of cinnamon

Cream:

🔸 1 creamy soy yogurt (125 g / ½ cup) (you can use plain cow's milk or Greek).
🔹 30 ml olive oil (2 tbsp)
🔸 1 egg L
🔹 Salt
🔸 Pepper

🔹 Poppy seeds and sesame seeds for garnish (optional)

🍳 Directions:

1️⃣ Prepare the filling. Julienne the red cabbage and wash it. Peel and cut the carrots into beveled slices and these into sticks. Cut the onion into julienne strips lengthwise.
2️⃣ In a large frying pan, put 2 or 3 tablespoons of olive oil. Sauté the onion with a little salt, over low heat, until it is poached. Add the carrots and red cabbage. Season with salt and pepper and cook for about 5 minutes over medium heat. Add the pinch of cinnamon and mix well. Add the orange juice and cook with the lid on until it evaporates (about 5 minutes).
3️⃣ Let the vegetables cool completely. Soak the raisins in water for 15 minutes. Drain and mix with the vegetables.
4️⃣ Prepare the cream. In a bowl, beat the egg. Add the yogurt, oil, salt and pepper. Mix well.
5️⃣ Place a sheet of filo dough on the work surface. Brush the top with the cream and join at that point with another sheet. Brush the first sheet (be careful not to put too much cream, otherwise the dough will get too wet and break). Place a horizontal line of vegetable filling. Fold the dough over and roll it up. When you reach the second sheet, brush it too and finish rolling it up. Repeat 4 more times.
6️⃣ Place the filled filo cylinders in a spiral shape on a baking sheet brushed with oil. As you place them, join the ends by rolling up pieces of filo dough brushed with the "glue cream".
7️⃣ Transfer the cake to the baking sheet. Brush the entire surface with the remaining cream. Sprinkle the surface with poppy seeds and sesame seeds (optional, but they give a very rich flavor and crunchy texture, as well as presence).
8️⃣ Bake at 180 ºC (350 ºF), with the oven preheated, 35 minutes.
