Hyderabadi Mutton Biryani is popular in Indian cuisine. There are two ways of making a mutton dum biryani,

one is called Pakki biryani, in which you cook the meat separately and then layer it with the rice, seal and cook on a very low heat. The other method is Kachi biryani, in which you marinate the meat, place it at the bottom of the pot and cover it up with boiled rice, seal and cook on a very low heat.

Authentic biryani is usually judged on the basis of its taste, the quality of meat and the blend of spices and rice. Here I have used raw papaya paste to tenderize the mutton and did not marinate the mutton for a long time. The recipe requires less time as meat tenderizers help in cooking the biryani fast. So here is the mutton dum biryani recipe which does not require patience and can be cooked quite easily just with the help of a tenderizer.

Serve hydrabadi mutton dum biryani  with some raita, salan  


Ingredients
For marinate Mutton -  
• Fresh Mutton   -  500 gm
• Raw papaya paste (Meat tenderizer)  - 2 tsp
• Ginger paste  -  2 tsp
• Garlic paste   -  2 tsp
• Green chili paste  -  2 tsp
• Turmeric powder  -  ½ tsp
• Red chili powder  -  3 tsp
• Coriander powder  -  1 tsp
• Garam masala p/w  -  ½ tsp
• Meat masala   -  ½ tsp
• Whole spices :
• Bay leaf   -  1
• Black cardamom  -  1
• Cloves    -  4
• Cinnamon stick  -  2 small pieces
•  Star anise   - 1
• Mace    -  1
• Caraway Seeds (Shahi jeera) - ½ tsp
• Cardamom p/w  -  ½ tsp
• Nutmeg powder  - ¼ tsp
• Rose petals   -  1 tsp
• Saffron strands   - a pinch (optional)
• Kasoori methi  -  1 tsp
• Salt    -  as per taste
• Chopped mint leaves  -  1 tbsp
• Chopped coriander leaves – 1- 2 tbsp
• Thick curd   -  ½ cup
• Friend onions   -  ½ cup
• Oil   -  ¼ cup
• Ghee    -  1 tbsp
• Lemon   -  Half
For Rice
• Long grain rice   -  2.5 cup
• Salt    -  2 tbsp
• Green cardamom  -  3
• Star anise  -  1
• Peppercorns   -  5
• Bay leaf   -  1
• Peppercorns  -  5
• Ghee    -  ½ tsp
• Water    -  2.5 liter
For Biryani assembling
• Ghee    -  1 -2 tbsp
• Saffron milk   -  1/3 cup
• Mint leaves
• Coriander leaves
• Fried onion
• Dough
