We calculate the work done by gravity, then define the gravitational potential energy as U=mgy.  It turns out that Wg=-deltaU, and now we can use the potential energy function to keep track of work done by gravity.  Since this work is path-independent, it will only depend on the initial and final y coordinate, allowing us to ignore the path of the object.
