Understand the health benefits and function of natural enzymes used in bread baking.
This video explains each of the most common family groups of enzymes either added or naturally occurring within not only bakery products but humans and most other living organisms on the planet.
New studies and research is on going in the area of healthy enzymes as a way to reduce or potentially eliminate some of the more questionable baking additives used in dough conditioners and bakery products around the world.

This video covers the most important digestive enzymes in the human body and the correlation of these enzymes on dough rheology. The enzymes we will cover off are amylase, protease, lipase, maltase,  and lactase.  

The objective of my What is in my bread...and Why - series is to help consumers and home bakers understand what these things are, why they are being used and if they fit into your health and lifestyle objectives when selecting baking ingredients or finished products.
