For those who are not aware of the Japanese soft and chewy sweet treat, mochi ice cream is simply a round ball of sweet rice dough with ice cream at the core. The ice cream flavour you wish to use is totally up to you, so, use this recipe as a guideline and get creative. You could even add fruit within the ice cream to make it extra special. For best results, I recommend using mochiko, but glutinous rice flour works well as a great substitute.
