30g sugar (2Tbsp+1tsp)
Food coloring (optional)

[ 18cm * 5cm (height) ]
140g cream cheese (2/3 cups)
30g sugar (2Tbsp+1tsp)
1 yolk (14 g)
3ml vanilla extract
30g sugar (2Tbsp+1tsp)
35g unsweetened yogurt (2Tbsp)
5ml lemon juice (1tsp)
1 lemon zest
3 g (1 tsp) gelatin
140g heavy cream (1/2 cup + 1 Tbsp + 1 tsp)
(50% whipped)
♥ Lemon Cream
1 egg
35g Lemon juice (for 1 piece)
10 g (2 tsp) water
40g sugar ( 3Tbsp )
pinch of salt
7 g cornstarch ( 1 Tbsp )
Lemon Liqueur 3ml (Lemon Dijon)
lemon zest 1
1 g gelatin (1 tsp)
25g unsalted butter (1Tbsp+2tsp)
● Chocolate PAIN DE GÊNES
1 egg
40g sugar ( 3Tbsp )
Dark rum 5g (1tsp)
5 g honey (or glucose)
2 egg whites
50g sugar ( 4Tbsp )
60g almond powder ( 1/3 cup + 1 tsp )
15 g cornstarch ( 2 Tbsp )
15 g all-purpose flour (2 Tbsp)
10g cocoa powder (1Tbsp+2tsp)
55g unsalted butter ( 1/4 cup )
♥ Apricot Syrup
10 g apricot jam (2 tsp)
20g water (1Tbsp+1tsp)
♥ Lemon Jelly
40g hot water (2Tbsp+2tsp)
3 g lemon juice
8 g sugar (2 tsp)
3 g gelatin (1 tsp)
Food coloring (optional)
