Did you know you can easily make any flour, a "high protein" flour (i.e. a "strong flour") High protein flour is especially important for making bread, so get ready to up your bread baking game, and perhaps even your pizza making. I will also share a simple, generic formula, so you can precisely & easily add the proper amount of protein to what-ever flour you are using. Enjoy :)

Vital wheat gluten formula
Grams version
1) Multiply 1.5 times the % protein you want to add
2) Divide the total flour in your recipe by 100
3) Take the answer from point 1 and multiply it by the answer from point 2 and that will equal the amount of vital wheat gluten to add
Example:
You have 400 grams of flour and you want to add 1 ¾% more protein
1) Multiply 1.5 times 1.75 = 2.62
2) Divide 400 by 100 = 4
3) Multiply 2.62 x 4 = 10.48 grams and that’s how much vital wheat gluten you will need to add
Ounces version
1) Multiply 0.053 times the % protien you want to add
2) Divide the total flour in your recipe by 3.53
3) Take the answer from point 1 and multiply it by the answer from point 2 and that will equal the amount of vital wheat gluten to add
Example:
You have 16 oz of flour and you want to add 1 ¾% more protein
1) Multiply 0.053 times 1.75 = 0.09
2) Divide 16 by 3.53 = 4.53
3) Multiply 0.09 x 4.53 = 0.40 ounces, and that’s how much vital wheat gluten you will need to add
