Peach Habanero Jam

5 Cups of Frozen or Fresh Peaches (Pealed and Pitted)
3-4 Habaneros depending on desired heat level
1 Box of Powdered Fruit Pectin (1.75oz)
2 TBS Lemon Juice
4 Cups Granulated Sugar

1. Wash Jars well.This reciped used 6-8oz Mason Jars for me. Clean with soap and water and place in hot water canner. Boil for 10 mins.
2. Carefully remove Habanero stems and seeds. Blend with peaches in a food processor or blender.Blend until smooth.
3. Pour puree into a large pot. Mix in lemon juice, cinnamon, and pectin over medium/high heat. Boil for 5 mins.
4. Add sugar. Stir constanly with a wisk for 5 mins.
5. Remove from heat.
6. Fill jars using a ladle and funnel. Fill to approxamately 1/4". Wipe rims and place fresh lids on. Tighten rings to finger tight. Do not overtighten.
7. Process in boiling water ensuring that at least 1" of water is over the lids for 20 mins.
8. Remove from canner and set on towel. Let the jars rest for 12hrs and listen for the famous "ping".
