Join our Corporate Executive Chef Manny as he shares a creative way to use your leftover Corned Beef and Cabbage.

Irish Egg Rolls Recipe:

What you’ll need:
- 8 oz corned beef, chopped or shredded
- 2 cups cabbage, shredded
- 1/2 cup carrots, shredded
- salt and pepper, to taste
- 10 egg roll wrappers, 6” square
- 1 ½ qts oil for deep frying
- Thousand Island Dressing for dipping

Directions:

1. In a medium bowl, mix together the shredded corned beef, cabbage, and carrots. Season with salt and pepper to taste.

2. Lay an egg roll wrapper out on a clean dry surface with the point facing you in a diamond position.

3. Place about ¼ cup of the mixture into the center of each wrap. Make sure it is spread evenly with equal space to the right and left side of the diamond.

4. Fold bottom corner over filling, making sure it is snug.

5. Fold in right and left sides of the wrapper over the filling.

6. Slightly wet the remaining top corner of the wrapper with a little water on your finger tip.

7. Roll filling upward and seal top corner. Set aside and repeat with remaining wrappers and filling.

8. Heat oil in a deep-fryer to 375°F. When oil is hot, fry rolls a few at a time, turning if necessary, for about 2-3 minutes, or until golden. Remove from hot oil and drain on paper towels. Serve with Thousand Island dressing and enjoy!
