CHOCOLATE LAVA CAKE RECIPE
(makes 2 lava cakes)
Ingredients:
1/4 cup ground oats or oat flour (25g)
1/2 tsp baking powder
1/4 cup unsweetened cocoa powder (25g)
1/4 cup date paste (75g)
1/3 cup milk (dairy or non-dairy)

Dark chocolate filling for 2 cakes:
2 tbsp mini dark chocolate chips

Cocoa filling for 2 cakes:
2 tsp cocoa powder
2 tsp coconut oil
2 tsp honey, maple syrup or agave

NUTRITIONAL INFO (dark chocolate filling, per cake):
186 calories, fat 5.1g, carb 37.8g, protein 5.9g

NUTRITIONAL INFO (cocoa filling, per cake):
194 calories, fat 5.7g, carb 38.3g, protein 5.8g

Preparation:
In a bowl, sift together the ground oats, baking powder and cocoa powder.

Add the date paste and milk, and whisk it all together until well combined.

Grease your ramekins with some butter or coconut oil, and line the bottom with the piece of parchement paper.

Pour a spoonful of the batter into each ramekin.

Place a tablespoon of dark chocolate chips or cocoa filling (half in each ramekin) into the center.

Top with the remaining batter.

Bake for 15 minutes at 400F (200C), or until the edges are set, but the center is still soft to the touch.

Let it sit for 2-3 minutes, then flip it over onto the plate.

Serve with the homemade berry sauce and some sliced almonds.

HOMEMADE BERRY SAUCE:
Ingredients:
1 cup frozen mixed berries (150g)
1 tbsp honey
1 tbsp chia seeds
2 tbsp water

Preparation:
Place all the ingredients into a small saucepan.
Bring it to boil, lower the heat and simmer for 5 minutes.
