Plaasbrood

Bestanddele:
3 koppies lou-warm water
1⁄4 koppie suiker
1 1⁄2 eetlepel kits-gis
1/3 koppie koppie sonneblom of kanola olie
1 Tafellepel sout
6 - 8 koppies wit brood meel ( bruinbrood, vervang 2 koppies witbrood meel met nutty wheat meel)

AANWYSINGS

Meng die meel, suiker, kits-gis en sout in ‘n groot mengbak. Voeg die olie in en die water bietjkies vir bietjies by terwyl jy knie. Ek gebruik ‘n masjien met ‘n deeghaak om die knie-proses makliker te maak, maar jy kan die brood ook met jou hande knie.

Maak seker jy voeg nie te veel water in nie, jy soek ‘n lekker elasties en sagte, hanteerrbare deeg. Indien jy te veel water invoeg, moenie bekommer nie en voeg net bietjies- bietjies meel by tot deeg lekker is.

Sit die deeg in ‘n bak om te rys. Smeer bokant met olie bedek met plastiek sak of (liggies met kleefplastiek).en sit op ‘n warm plek.

Sodra lekker gerys, knie die deeg weer af en sit in ‘n groot broodpan of deel die deeg en sit in 2 kleiner broodpanne en laat weer lekker rys op ‘n warm plek.

Bak in groot brood-pan (plaas brood pan) teen 200 grade vir sowat 40 minute of kleiner 2 brood panne teen 200 grade vir so 25 minute. Berg in digte sak. Brood vries ook lekker.


English Recipe:

Farmhouse Bread

Ingredients:
3 cups luke-warm water (Maximum 3 cups)
1/4 cup sugar
1 1/2 Tbsp. yeast
1/3 cup oil
1 Tbsp. salt

6 - 7 cups unbleached ground white wheat flour (You can use regular all-purpose flour with success as well. You will need more flour... closer to 8 cups, and it will make a softer, less-coarse bread).  For a brown version replace two of the white bread flour with nutty wheat flour.

DIRECTIONS

Mix all dry ingredients and slowly add the oil.  Add water little by little. Knead the dough thoroughly until all ingredients are incorporated, and dough is smooth, elastic, very slightly sticky, and pulls away from the bowl (6-10 minutes). As you knead the dough, you may add more flour as needed, and repeat the process until dough reaches the desired consistency.

Cover the bowl of dough with a dish towel or plastic wrap and let rise until doubled (an hour or more depending on how warm your kitchen is.) You may speed up this process by placing the covered bowl inside the oven with the oven light on, and another bowl of warm water sitting on the lower rack.

Punch the dough down, divide and and form into 2 loaves. Place the dough in 2 greased bread pans. (I use 9" pans.) Cover and let rise till the top of the dough is an inch or two above the bread pans.

Bake at 200 degree Celsius for 25 minutes. Remove the baked loaves from their pans immediately, and place on a cooling rack. Slice, and serve warm with butter and honey.

Alternatively, put all this dough in a big farmhouse bread pan and bake for 45 minutes at 200 Celcius.

Store in an air-tight bag. Baked loaves AND bread dough freeze well.
