Today I made a cute half-moon shaped hazelnut chocolate roll cake.
In fact, this cake is somewhere between a roll cake and a mousse cake.

I made a praline with my favorite hazelnuts.
I think this method was easier to make.
Last time, the caramel hardened quickly in the pan and it was difficult to remove.

What is praline?
It refers to candied nuts or Belgian chocolate stuffed with nuts, alcohol, or butter.
In France, nuts such as almonds and hazelnuts coated with caramelized sugar are called pralines.
It is said that it was made by the cook of the Count César de Choiseul du Plessis-Praslin (1598-1675), a sugar maker who served as a diplomat in France in the 17th century, and the name praline is said to have been derived from the Count. .
Praline is used as an ingredient in cakes, pastries and ice cream, and is also powdered and added to chocolate.

15 g cocoa powder ( 2 Tbsp + 1 tsp )

35g milk ( 2 Tbsp + 1 tsp )
30g unsalted butter ( 2 Tbsp )

● Anglaise Sauce
yolk 2
25 g sugar ( 2 Tbsp )
70g milk ( 1/4 cup + 2 tsp )
3ml vanilla

● Caramel Hazelnut Mousse
10g milk chocolate ( 1 Tbsp )
30g hazelnut praline ( 1/4 cup )

50g Anglaise Sauce

2 g powdered gelatin ( 1/2 tsp )
10 g (2 tsp) water

75g heavy cream (50% whipped) ( 3 Tbsp+ 1 tsp )

● Mascarpone Dark Chocolate Mousse

80 g dark chocolate ( 1/2 cup )
45g Mascarpone ( 3 Tbsp + 1/2 Tbsp )

Anglaise Sauce 70g


3g powdered gelatin ( 1tsp )
15 g (1 Tbsp) water

160g heavy cream ( 1/2 cup + 3 Tbsp )

● Syrup
50 g water ( 3 Tbsp + 1 tsp )
35g sugar ( 2 Tbsp + 2 tsp )
5ml Negrita Dark Rum ( 1 tsp )

100g dark chocolate ( 1/2 cup + 2 Tbsp )
