250 grams of flour 00 Caputo
25 gramssugar

110 grams whipping cream 35%
Half a vanilla stick
2 egg yolks (40 grams)

60 gramswhite chocolate

To prepare: In a pot, boil the milk, cream and vanilla. In a bowl, mix the
egg yolks, sugar and starch. Gradually pour the first mixture into thesecond mixture. Cook the custard for 2 minutes until it thickens. Add thewhite chocolate and mix, then the butter and mix, and finally the gelatin.Using a hand blender, mix until the custard becomes soft and shiny. Cool
in the refrigerator. At least 4 hours.. Whisk it a little before stuffing!
To prepare the dough:
In the bowl of the mixer, addflour, sugar, salt, yeast, and vanilla andmix them, then add the eggs, milk, and butter.
We knead them at a low speed until the ingredients are mixed and theflour disappears, then we turn it off and leave it for 30 minutes. Afterthat, we turn on the mixer and knead it at a high speed for 7-10 minutes.
Until we have an elastic, shiny and strong dough.We leave it overnight for 12 hours inrefrigerator, or up to 24 hours.is important for successful brioche to ferment slowly (it ferments in therefrigerator).
The next day, we takedough out of the refrigerator, remove the
from it, and then shape it while it is cold into small pieces, each weighing30-35 grams. We shape them into balls and arrange them on a tray
containing parchment paper. Cover it and leave it for an hour and a half
to two hours until it doubles in size.
Heat the oil to 165 degrees Celsius, fry the donuts on each side for a
minute and a half to two minutes.
We fill it with vanilla pastry cream filling and good luck
