Kulkuls / Kidyo
are beautiful little sweet curls made during christmas season in and around Mangalore.
These are very easy to make ...even kids enjoy making these...
Here i have shown eggless kulkuls, crisp and thin version  which we get in mangalorean Bakeries.
If you wish to make fluffy and flaky version then add 1-2 tbsps of extra ghee or butter to the same recipe.

Yield : 110 kulkuls approximately
Time :1 hour

Ingredients:
All purpose flour 250g /2 cups
Salt 1/4 tsp
Powdered sugar 2-3 tsp ( increase if you like more sweeter)
Melted ghee / butter 1 tbsp ( increase if you like fluffy)
Coconut milk 3/4 cup ( approximately)

Method:
1. Mix flour,salt and sugar.
2. Add ghee and rub with fingers.
3. Add little by little coconut milk and knead the dough.
4. Continue kneading while adding 1 tsp of coconut milk until you get soft, pliable nonsticky dough.
5. Take a pinch of marble sized dough and spread it on any mould ( unused comb, fork or kurpon/woven plate) , then roll backwards to form curls.
6. Heat oil in a wide pan, check the readiness of oil by adding a pinch of dough.
If it comes up within 6-8 seconds then oil is ready.
7. Carefully drop prepared kulkuls in oil and fry on medium flame until they turn golden.
8. Once done take them on to the kitchen towel.
9. Cool them completely for around 3-4 hours.
10. Mix some icing sugar until they coat evenly.
11. Store them in an airtight container and enjoy.

Note:
1. You can add milk cream/ milk instead of coconut milk ..
2. More you add ghee/butter the fluffier it comes..
3. If you do not wish to roll them in sugar later, you can add 1 -2 tbsp  of extra powdered sugar while kneading the dough.
