Boil the eggs, remove the shells, cut them into halves and keep them aside. 2. Take a wide, flat pan and add oil. Add turmeric powder, red chilli powder, black pepper powder and salt. 3. Mix well and saute the powder for 10 seconds. Then place the egg halves and roast them for 2-3 minutes each side on a low flame. 4. Remove the roasted eggs from the pan and keep aside. 5. Take oil in a wide kadai and heat it. Add mustard seeds and cumin seeds. Saute. 6. Once the mustard seeds start splattering, add onions and saute until they are golden brown in color. 7. Add green chillies, ginger garlic paste and saute until the raw smell is fully gone. 8. Add the tomato puree and mix. Saute until the moisture is fully gone and the gravy is thickened. 9. Add red chilli powder, coriander powder, black pepper powder and salt. Mix well. 10. Add water, mix well and cook the gravy for 5 minutes. 11. Gently drop the roasted eggs in theh gravy and cook them in the gravy for 5 minutes. 12. Lastly add fresh curry leaves and coriander leaves. Turn off the stove. 13. Yummy, tangy and spicy egg curry is ready to be served hot and nice with rice/roti. Egg curry is a favorite dish for many people. It can be done in many ways.
