Recipe:
Ingredients:

1 kg chicken, cut into pieces
2 cups basmati rice, soaked
1 large onion, thinly sliced
2 tbsp ghee (clarified butter)
2 tbsp oil
2-inch piece of ginger, grated
4-5 cloves of garlic, minced
4-5 green cardamom pods
2-3 black cardamom pods
1 cinnamon stick
4-5 cloves
2 bay leaves
1 tsp cumin seeds
1 tsp coriander powder
1/2 tsp turmeric powder
1/2 tsp red chili powder
Salt to taste
6 cups water
Instructions:

In a large pot, heat ghee and oil. Add sliced onions and sauté until golden brown.
Add ginger and garlic, and sauté until the raw smell disappears.
Add chicken pieces and brown them on all sides.
Add green cardamom, black cardamom, cinnamon stick, cloves, bay leaves, and cumin seeds. Sauté for a minute.
Stir in coriander powder, turmeric powder, red chili powder, and salt. Mix well.
Pour in 6 cups of water and bring it to a boil. Once boiling, reduce heat, cover, and simmer for 30-40 minutes to make a rich chicken broth (yakhni).
Strain the yakhni and set aside the chicken pieces.
In another pot, heat ghee and add soaked basmati rice. Sauté for a few minutes until the rice is lightly toasted.
Add the strained yakhni to the rice and bring it to a boil. Reduce heat, cover, and cook until the rice is tender and absorbs the flavors.
In a separate pan, fry the chicken pieces until golden and add them to the pulao.
Gently mix the rice and chicken, ensuring they are well combined.
Serve hot, garnished with fresh coriander leaves and fried onions.
